In regular wheel settings, click on what to use for accelerator and press that pedal all the way down. Chose what to use for brake and press that pedal all the way down. Clear any bindings for acceleration and brake in the non wizard portion of the control setup, then run the wizard.

Well.. ideally neither. But since an xbox controller isn't an option in this scenario, I'd go for the keyboard route. I've played the game for the longest time on my trusty old keyboard and it worked just fine. While not analog like a controller you do have a much finer control over your truck by using small taps compared to using a mouse
